Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and garlic, cooking until softened and fragrant.
Toss in the ground beef. Cook until browned, breaking it apart as you go.
Add the diced sweet potatoes. Stir everything and let them cook for 10–12 minutes until they start to soften.
Mix in the zucchini, paprika, cumin, salt, and pepper. Keep stirring occasionally and cook for another 7–8 minutes until the veggies are tender.
Turn off the heat. Crumble the feta over the top and gently fold it into the pan.
Sprinkle with chopped parsley before serving. Dig in while it’s warm.
