Wash the peppers and cut off the tops then pull out seeds and trim the ribs so the cups stand flat
Heat a pan set to medium and soften onion in a splash of oil then add garlic and stir till fragrant
Add ground beef and cook till browned with small crumbles then season with paprika oregano salt and pepper
Stir in tomato paste and tomato puree then fold in cooked rice and most of the cheese taste and adjust seasoning
Fill the pepper cups with the warm mixture and cap with a light sprinkle of the remaining cheese
Brush pepper exteriors with a touch of oil and place upright in the air fryer basket use a small baking dish if they wobble
Cook at 180 C for 15 to 20 minutes till peppers feel tender and the tops look golden
Rest for 3 minutes then finish with parsley and serve hot
