Zutaten

For the Chicken and Broccoli

  • 500 g chicken breast cut into small cubes
  • 2 cups small broccoli florets
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon lemon zest

For the Alfredo Sauce

  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1 and 1 half cups heavy cream
  • 1 cup freshly grated Parmesan
  • 1 quarter cup reserved pasta water
  • Pinch of nutmeg

For the Pasta

  • 350 g fettuccine or penne
  • Extra Parmesan for serving

Anleitung

Cook the Pasta

  1. Boil a large pot of salted water and cook the pasta till al dente
  2. Reserve a splash of the cooking water and drain the rest

Sear the Chicken

  1. Heat oil in a wide pan over medium heat
  2. Season the chicken with salt pepper and lemon zest
  3. Sear till golden and cooked through then move to a plate

Steam the Broccoli

  1. Add the florets to the pasta pot for the last two minutes of cooking or steam in a small basket till crisp tender
  2. Drain well so the sauce stays rich

Make the Sauce

  1. Melt butter in the pan and stir in garlic till it smells sweet
  2. Pour in cream and let it gently bubble till slightly thick
  3. Whisk in Parmesan till smooth
  4. Loosen with a little pasta water if the sauce looks tight
  5. Season with salt pepper and a pinch of nutmeg

Finish the Dish

  1. Add pasta chicken and broccoli to the pan and toss till each piece shines
  2. Plate and shower with more Parmesan
  3. Serve hot with a green salad if you like
